Mixing

Process description

Various food products are brought together in mixers. Without adequate cooling, the product will be warmed by the mixing process. In order to compensate for this heat and/or to cool the product, mixers are equipped with cooling systems. These systems vary between direct and indirect cooling.

Gas application

Mixers are equipped with a cooling system working with either liquid nitrogen or liquid carbon dioxide.

Advantages:

  • Very rapid cooling of product through direct introduction of cooling medium into the mixer
  • Optimum utilisation of the cooling medium through direct contact with product (large heat exchange surface)
  • Simple assembly of coolant supply onto mixer
  • No dilution of the product due to cooling water or chipped ice

Messer solution

The use of the Variomix process and our patented Clapet nozzles has proven particularly successful in meat processing, the industrial production of bakery products and in the mixing of pourable foodstuffs.
